Olive Oil Mayonnaise




We won't talk about how much nice oil has become nice-oil-with-egg-in-it with my attempts to make mayonnaise. I've attempted it maybe 12 times, and made it successfully three. The first was with canola oil (uck), the second was with grapeseed oil and was bright green but otherwise fine, and this third success was exactly what I was going for- olive oil mayonnaise that looks normal. Just wanted to share. Made in my food processor, with one egg and one cup of olive oil. I'm going to hold off doing any sort of authorative speaking until I'm getting consistently good results, so this is just to share my triumph with you!

Just one egg and one cup of olive oil makes mayo? It sounds easy...which scares me! lol I definitely need to try to make my own mayo.

Here is my little bit of advise. Make sure your eggs are at room temperature. Whenever the egg is cold at all the mayo doesn't turn out. Try it and see if that is the problem.

Good tip! This time my eggs were room temp, I've been leaving them out lately because our fridge is small. I was wondering if that had something to do with it but wasn't sure!

It tasted good, like store mayonnaise (I think, though I'm someone who can tell, for instance, store brand vs generic). I did use refined 'light' olive oil, I bet the more virgin olive oil would have a stronger taste. I did it again today, and it worked again (with the room temp eggs) and took a video that I'm trying to upload now. I'm not sure how long before it would go bad, we used it up ~grin~
